ABC – Arte, Bar e Cucina Zattere opens a new season with two new chefs in the kitchen, reaffirming its vocation as a fluid space in constant evolution, where contemporary art, gastronomic sustainability, and cultural projects intertwine. The gastronomic vision of ABC Zattere continues to develop as a living and dynamic organism, capable of transforming over time without losing coherence with its founding values. Leading this evolution is Nathan Cal Danby—chef, designer and curator of ABC’s culinary format—who has selected a new team to develop and expand the research begun since the opening. The cuisine at ABC is not tied to a single signature, but conceived as an open laboratory where every new presence contributes a personal vision in dialogue with the territory, seasonality and the cultural identity of the lagoon. 

In this new chapter, Fabio Cavallari (head chef ) and Bruno Pappalardo (sous chef ) step into the kitchen: two profiles with different yet kindred paths, united by a sensitivity for food as language, gesture and storytelling. Between art and cuisine, Fabio creates dishes as narrative gestures, where food becomes language, encounter, and cultural action. Bruno, from the slopes of Mount Etna to the Venetian lagoon, weaves land and sea together in an essential, sincere cuisine, rooted in memory and place.

The kitchen is based on seasonal ingredients from small local farms that follow sustainable practices. The wine list reflects this philosophy with natural, artisanal wines chosen to complement the dishes. The menu, influenced by diverse cultures, evolves constantly and is designed for every moment of the day, offering fresh, shareable dishes. Designed by Fosbury Architecture, the space merges architecture and conviviality, hosting events and artistic collaborations.
